Our Story
At Birch, we deeply value our relationships with the people of our community - our local farmers, purveyors, and guests. Chef Kyle Knall's ever-evolving seasonal menu celebrates the flavors of the Midwest, featuring contemporary farm-to-table cuisine cooked over an open, wood-fired hearth. Complemented by warm hospitality and unparalleled service, Kyle and Meghan Knall opened Birch in 2021, bringing a vibrant dining experience to The East Side of Milwaukee. Since opening, Chef Kyle has received two coveted nominations from the James Beard Foundation Awards for "Best Chef: Midwest" in 2024 and "Outstanding Chef" in 2022.
Our Farmers
We believe that our farmers and producers are the foundation of delicious food and American cooking. We work closely with Stone Bank Farm and the vendors of West Allis Farmers Market, where our chefs can be found selecting produce year-round. In the cold months, we make use of the food that's been cellared by these same farmers.
We take the same approach when hand-selecting our wine list, featuring small producers who add as little as possible to the winemaking process and treat the vineyards with great care.
